Frugal Buffalo Chicken Wings

The story is that Bellissimo, owner of the Anchor Bar in Buffalo was trying to figure out the age old question that mothers of boys will eventually face: what to feed her son and his friends as a late night snack. She happened to have extra chicken wings on hand, so she concocted a sauce that was a blend of butter and spicy chilies, tossed the wings in the sauce, and then fried them up. She paired them with blue cheese dressing and celery sticks to help mollify the heat from the sauce. As you can guess, they were a success. The rest is culinary history.

Ok, so now we get down to the meat of this page – a buffalo chicken wing recipe that is not only tasty, but frugal. Look no further for this most simple of simple chicken wing recipes.

What You Will Need

  • 1 cup of flour (all-purpose)
  • ½ teaspoon of paprika
  • ½ teaspoon of cayenne pepper
  • ½ teaspoon of salt
  • 20 chicken wings
  • Oil
  • ½ cup of butter
  • ½ cup of your favorite hot sauce
  • 1 teaspoon of ground black pepper

What to Do

Mix together the flour, paprika, cayenne pepper, and salt in a large bowl. Toss the chicken wings in the mixture until they are evenly coated. Cover the bowl and refrigerate for 60 minutes.

Heat oil in a large pan or deep fryer to 375 degrees. There should be enough oil to cover the wings  in full.

In a small saucepan, mix the butter, hot sauce, pepper, and garlic powder. Heat on low and stir until the butter melts and the mixture is blended well. Remove the sauce from the heat and set it aside.

Fry the wings in the heated oil  until it begins to brown (10 to 15 minutes).  Remove from heat and transfer to a large serving bowl. Add the hot sauce mixture and toss the wings in it to coat them .

Serve with celery wings and blue cheese dressing (optional). Enjoy!

  • 4 cups of shredded chicken, cooked

  • 2 tablespoons of mustard
  • Salt and pepper to taste

What You Will Do

  1. In a bowl, combine the chicken, the pickles, the mayonnaise, and the mustard. Blend well.
  2.  Add salt and pepper to taste. You may want to use more mayonnaise. It’s up to you!

Flautas are a Spanish dish named as such because the shape is similar to a flauta (Spanish for ‘flute’). They are quick and easy to prepare with the added bonus of being frugal as you probably already have most of the ingredients at home.

What You Will Need

  • 6 tortillas
  • 1 cup of shredded cheese
  • 1 cup of shredded chicken
  • 1 teaspoon of ground cumin
  • Salsa
  • 4 teaspoons of vegetable oil
  • Toppings (sour cream, guacamole, etc.)

What You Will Do

  1. In a small bowl, mix together the shredded chicken, the shredded cheese, and the ground cumin.
  2. Place some of the chicken mixture on each tortilla and top with a tablespoon of salsa for each one
  3. Roll the tortillas tightly and use a toothpick to secure it. Brush each one with oil.
  4. Cook over medium heat in a skillet for about 5 minutes, flipping occasionally, until the tortillas are browned and crispy.
